Ynyshir Restaurant Hygiene Rating Controversy: Giles Coren vs. Food Safety (2026)

A recent controversy has sparked a debate about the application of hygiene ratings to Michelin-starred restaurants. Food critic Giles Coren has made a bold statement, suggesting that these prestigious dining establishments should be exempt from ordinary health and safety regulations. But here's where it gets controversial...

Coren, after visiting the two-star Ynyshir Restaurant and Rooms in 2022, claimed that inspectors needed an update in their approach. This restaurant, charging nearly £500 per person, received a hygiene rating of just one out of five, indicating the need for major improvements. Coren argues that high-end restaurants operate in a unique culinary realm, where traditional health and safety rules may not apply.

He describes the chef's cooking style as a fiery, leather-aproned performance, contrasting it with the typical image of a neat kitchen. Coren further explains that the restaurant serves a lot of raw food, employing sushi and Japanese techniques. In his opinion, the rules should be modernised to accommodate such unique culinary experiences.

However, the Chartered Institute of Environmental Health (CIEH) strongly disagrees. They argue that Coren's views risk portraying food hygiene rules as optional or outdated, when in fact, they are essential for public protection. CIEH's food advisory panel chairwoman, Una Kane, expressed disappointment with Coren's misconceptions about food safety standards.

Kane emphasised that no restaurant, regardless of its exclusivity or uniqueness, is above the law. She denied that food hygiene inspections were merely a formality, stressing their critical role in ensuring hygienic food handling and production.

In Wales, where Ynyshir is located, restaurants are mandated to display their food hygiene ratings. Kane clarified that Ynyshir's low rating indicated it was operating below legal standards. She welcomed the restaurant's cooperative efforts to address the concerns raised by the local environmental health team.

This debate raises important questions about the balance between culinary creativity and food safety. Should certain restaurants be exempt from standard health and safety practices? Or is it essential to maintain consistent hygiene standards across all dining establishments? What are your thoughts on this controversial issue? Feel free to share your opinions in the comments!
